About Ostras:  Ostras is a Latin-Asian Oyster Bar and fine dining restaurant that seeks to showcase the beauty of the 19th parallel north, connecting Mexico with many Southeast Asian countries. We combine the flavors of Mexico, Thailand, Laos, Vietnam, and China to create a unique culinary experience. Inspired by renowned establishments like Mare in Chiang Mai, La Docena in Mexico City, and Porto in Chicago, our mission is to tell the story behind our ingredients and the techniques from the lands they originate.

Job Summary:  The Sushi Chef at Ostras is responsible for preparing and presenting high-quality sushi dishes that align with our Latin-Asian fusion concept. This role includes handling raw bar items and integrating Mexican and Southeast Asian flavors into traditional and innovative sushi creations. The Sushi Chef works closely with the Executive Chef and kitchen team to maintain the highest standards of quality, presentation, and food safety.

Key Responsibilities:

  • Sushi Preparation and Presentation:
    • Prepare sushi dishes following recipes and presentation standards.
    • Maintain expertise in knife skills and raw fish handling.
    • Ensure that all sushi and raw bar items reflect the Latin-Asian fusion style.
  • Menu Development:
    • Collaborate with the Executive Chef to design sushi items that align with seasonal and local ingredients.
    • Experiment with and introduce new flavors, including Mexican and Southeast Asian influences.
    • Assist in creating seasonal specials and new dishes that enhance the sushi and raw bar experience.
  • Quality Control:
    • Ensure all ingredients are fresh, stored properly, and of the highest quality.
    • Conduct daily inspections for freshness, presentation, and portion control.
    • Maintain rigorous standards for cleanliness and food safety in sushi preparation.
  • Inventory and Cost Management:
    • Manage inventory of sushi ingredients, including seafood, rice, and specialty sauces.
    • Ensure efficient use of ingredients to minimize waste and control costs.
    • Assist in ordering supplies and managing stock levels.
  • Guest Interaction:
    • Occasionally engage with guests to explain sushi dishes and provide a memorable dining experience.
    • Be knowledgeable about the ingredients and techniques used, offering insight into the fusion elements of each dish.

Qualifications:

  • Experience:
    • Minimum of 2 years of experience as a Sushi Chef in a fine dining establishment, with a focus on high-quality seafood and raw bar items.
    • Experience in Latin and/or Asian cuisines is a strong asset.
  • Skills:
    • Expert knife skills and sushi preparation techniques.
    • Strong understanding of food safety, especially in handling raw fish.
    • Creativity in combining flavors and presentation in line with the Latin-Asian concept.
  • Personal Attributes:
    • Passion for sushi and fusion cuisine.
    • Positive attitude, strong work ethic, and ability to thrive in a fast-paced environment.
    • Team player with good communication skills.
